Weekly Meals!
We are doing a plant based week!
This week we have:
- Black Bean Burgers and sweet potato fries – we ended up using panko bread crumbs in the burgers and needed a lot more than it called for in order to make them patty like
- Pad thai (tofu) – We used tofu instead of the chicken discussed here!
- Masaman Curry (Obv we love this one)
- Flemish Onion Soup & Fennel Grape Fruit salad (Moosewood cookbook)
- black bean and sweet potato enchiladas
- We’ve also been doing a lot of overnight oats!
