4 cups Stock (Chicken or Vegetable)
2 teaspoons ground black pepper
1 can Maesri Liang Curry Paste
1 tablespoon Fish Sauce
10 Shallots
1 Zucchini
2 Carrots
1 Bell Pepper
8 ounces Shitake Mushrooms
1 can Baby Corn
Cilantro
.5 pounds Peeled Uncooked Shrimp
Directions
- Chop all vegetables (you can do some of this while waiting for stock to boil)
- Boil stock
- Add curry paste, peppercorns, fish sauce and stir until mixed
- Add chopped shallots and allow to go soft in broth
- Add chopped zucchini, mushrooms, bell pepper, and carrots
- Add shrimp, allow to cook for 5 minutes
- Add remaining vegetables
- Serve!
